Butter Cookies

🍪 Butter Cookies to Kickstart the Chinese New Year 🎉

Chinese New Year is just around the corner, and for me, that means heading back to my favorite “playground” — the kitchen — to whip up some festive treats. To warm up for the season, I decided to start simple with one of the easiest (and most delicious!) cookies: the classic butter cookie.

Believe it or not, this was my very first attempt at baking butter cookies. I wasn’t sure how they would turn out, but I’m thrilled to say they came out beautifully — crisp, buttery, and melt-in-your-mouth yummy! 😋

Since this was more of a fun experiment, I kept the batch small and ended up with just 25 cookies. Perfect for a little taste test before diving into bigger baking projects!

And because sharing is caring, here’s the recipe I used to make these delightful little bites:

Butter Cookies

(yield 25 pieces)

Ingredients:
75g butter
70g plain flour
20g corn flour
25g icing sugar
1/8 tsp vanilla essence
A pinch of salt

Method:
  1. Cream butter and icing sugar and mix well.
  2. Add in vanilla essence, mix well and add a pinch of salt.
  3. Mix in plain flour and corn flour.
  4. Using a piping bag and a decorative tip, pipe out the cookie into desired shape on parchment paper. If the batter is too stiff for piping, add in a little milk at a time to a more manageable batter.
  5. Top with cherries (or can use chocolate chip also).
  6. Bake at 160 degrees for 15-20 minutes until light brown.

These butter cookies pair perfectly with a hot cup of coffee ☕- absolutely irresistible! I’m already planning to bake a bigger batch for Chinese New Year. Next up, I’ll be experimenting with more cookies and cakes, and of course, I’ll be sharing all the fun (and recipes) right here on the blog. Stay tuned… until then, adios! 🎉🍪
